I have just connected a MAX32623PICO from Farnell to MBED Studio for the first time, but it’s appearing in the Target list as a MAX32630FTHR. What’s going on here? How do I get it to appear as the board it actually is

did you tried that also with KeilStudio Cloud if there is same behavior?
Also check - MAX32625PICO | Mbed. Probably also DapLink firmware update will be necessary.
